There’s lots of excitement in New Mexico right now. It’s green chile harvest time.
Everywhere we go for the next few weeks, sacks of green chile will abound.
And we’ll see and smell it being roasted. The smell of green chile roasting is a beautiful thing. It makes you feel alive!
Yesterday was the first time we bought a sack of our own and had it roasted.
30 pounds of freshly picked green chiles were put into the chile roaster…
The fire was turned on…
…and the drum turned the green chiles over the fire for about four minutes. Then the chiles were rinsed…
…which created steam… sorry, no smoke for the challenge…
…and the end result of beautifully roasted green chiles.
Life is good. ♥

OMG!! I can smell those chilies roasting. We used to live in Tucson, Az. and you could smell them roasting all over town. I love them. I’ve grown what’s called Big Jim’s this year, and they look alot like the Hatch chilies. 🙂

The ones we bought are hot, but you can get mild as well. Either way, they add a wonderful flavor to all kinds of food.

Up until my move west I’ve only seen folks selling shrimp on the side of the road. Now, I see lots of options for roasted chiles. I haven’t tried them, but a ‘neighbor in the know’ told me I must. So, I can’t wait to sample some. I must admit, I do miss the shrimp sellers!

I had never experienced the chile-rinsing step until last year – it practically peels the chiles for you. How cool is that?

Here in Austin, there’s a place that buys up thousands of pounds of the Hatch chiles and roasts them in front of their store. I can barely breathe for spiciness in the air. Makes my eyes water like crazy.

How I covet some of those chiles! I have only ever seen one place that roasted chiles, and it was only on that day. Nothing better!

Hi, I have never seen this done before, you learn something new every day! I suppose you use them in cooking..do you freeze them or dry them? Up here in Minnesota no one cooks chilis:)
